Easy peasy salmon with sweet potatoes and veggies


4 sweet potatoes
2 zucchini
1 squash
handful of cherry tomatoes
~4 tbsp olive oil
2 tsp minced garlic
1 tsp garlic powder
3-4 tsp pepper
3-4 tsp salt
half of one lemon
1 tsp lemon pepper (optional)


Preheat oven to 415 degrees, dice sweet potatoes (I used 4 small ones), drizzle olive oil over sweet potatoes and season with salt and pepper to taste, put that in the oven. Dice zucchini and squash, I used two zucchinis one one squash, grab a handful of cherry tomatoes. Put veggies in a pan and drizzle with olive oil, season with salt and pepper to taste, season with about 1 tsp of garlic powder and mix that around and pop in the oven. Last get 4 salmon fillets and drizzle with olive oil, season with salt and pepper, 2 tsp of minced garlic, and drizzle juice of half a lemon on the salmon. Add a dash of lemon pepper to the salmon if desired, about 1 tsp. At this point the potatoes should have been in there about 15 minutes, continue to bake all ingredients for about twenty more minutes, or until the sweet potatoes are at your desired texture, I like mine a little crispy.

You can mix this up and add different veggies, this is just what I had at the time. This recipe is so easy and quick and always delicious!
