Southwest Chicken Salad with Avocado Crema

Confession: I used to HATE salad! I would get a boring bag of spring mix, some tomatoes and Ranch dressing. Now, I love a good salad. You can always dress up salads and make them cater to your diet plans whether that is Keto, whole 30 etc. Old me would do a side salad with a huge steak but now I can make a whole meal out of a salad. It is important to find foods you enjoy and have fun with them! This salad is a hodge podge of things I love like sweet potatoes, quinoa, avocado's, black beans and top it off with salsa. You can also make this recipe into tacos and just put the ingredients in a corn tortilla, yum! I hope you enjoy this recipe and it gets you to start to like salads more!

Ingredients for salad:


  • A bag of greens of your choice, I used a bag of spinach and some romaine lettuce. Kale is also one of my go-to's for this recipe.
  • 1 can organic black beans
  • 1 diced bell pepper
  • 1 sweet potato
  • 1/4 cup cooked quinoa
  • 2 chicken breasts
  • Salt and pepper
  • 1 tbsp Olive oil
  • Chipotle seasoning, I used Mrs. Dash
  • 1 avocado
  • Handful of cherry tomatoes
  • Salsa (optional)
  • Cilantro (optional)

For Avocado Crema


  • 1 avocado
  • Juice of one lime
  • 2-3 tbsp water
  • 1/4 cup Greek yogurt or sour cream
  • Salt and pepper to taste


Dice up chicken, I have meat scissors I cut it up with and then season chicken all over with salt and pepper, and I used the Mrs. Dash seasoning pictured (about 1 and 1/2 tbsp). Cook chicken in skillet with some olive oil until it’s no longer pink in the middle.  For sweet potato, preheat oven to 415 degrees, dice sweet potato and drizzle with olive oil, sprinkle with salt and pepper and bake for about 20 minutes. Mix all ingredients in together in salad. For the avocado crema I used 1 avocado, juice of 1 lime, salt and pepper to taste, and about 1/4 cup of Greek yogurt or sour cream, a little bit of water (about 2-3 tbsp) to get the crema to the creaminess desired, mix all ingredients for crema in mixer till creamy. Drizzle crema over salad,top with salsa and cilantro if desired and enjoy! 😊
