How to Make Healthy Honey Dijon Chicken Breasts

I think one thing regular people struggle with is trying to think of new ideas in the kitchen so you aren't always making the same dish. One thing that can get pretty boring is baked chicken. Luckily, there are so many ways to change up how you make chicken. This Honey Dijon chicken is cheap and easy while also still healthy. I ate this with some cous-cous and baked zucchini and squash. The tangy flavor of the mustard along with the honey will have your taste buds happy. I really love keeping things simple for my readers while also delicious. I hope you enjoy!

  • 1/4 cup Dijon mustard
  • 3 tbsp honey
  • salt and pepper to taste
  • 1 tbsp rosemary
  • 1 tbsp red wine vinegar

  1. Preheat oven to 425 degrees
  2. season chicken all over with salt and pepper
  3. mix together mustard, honey, rosemary and vinegar
  4. pour the mixture over the chicken
  5. top chicken with more pepper and rosemary if desired
  6. bake for about 25 minutes or until cooked through

For the zucchini and squash

(I used 2 zucchini and two squash)

  1. Slice ends off of zucchini and squash
  2. slice the zucchini and squash long ways, then chop to create half circles (any way would work, this is just how I like it)
  3. drizzle olive oil all over the vegetables lightly and toss
  4. season all over with salt and pepper
  5. season all over with 1-2 tsp of onion powder and 1-2 tsp of garlic powder
  6. bake at 425 degrees for 20-25 minutes
