Quick, Easy, Healthy Italian Chicken over Zoodles

Why did it take me so long to try zoodles? I mean, I love zuchinni and I love pasta so I don't know why I waited so long! I recently tried them last week and just bought the frozen bag from Walmart and Sauteed it with some shrimp and a spicy butter sauce and it was great! So last night, we are just crawling our way to pay day and I was looking around my cabinet trying to think of something easy to make. So I threw together this Italian chicken! My boyfriend called it "Healthy Chicken Parmesan," which it kind of was except I used mozarella. I am all about cheap and easy if you can't tell by now because my schedule is always so chaotic. So, I went ahead and bought the premade frozen zoodles and sauteed them in a pan with olive oil salt and pepper for this recipe, but if you have time go ahead and make your own! I hope you enjoy this recipe and feel free to spice it up however you feel!


Ingredients:

  • Tomato Basil marinara, I love this one from Trader Joes
  • Zoodles (frozen or fresh, follow package instructions on how to cook)
  • salt and pepper, to taste
  • mozarella
  • chicken breasts (3-4)
  • olive oil
  • Italian Seasoning 1 tsp
  • Minced garlic 1 tsp 


Directions:

  1. Preheat oven to 415 degrees
  2. Season chicken all over with salt and pepper, Italian seasoning, and minced garlic
  3. put marinara sauce over the chicken
  4. top chicken with mozarella, I used the mozarella balls form Trader Joes 
  5. bake for about 25 minutes or until chicken is cooked through
  6. serve over zoodles, cauliflower rice, or whatever you like!
