Fast, Easy and Healthy Chicken Curry

When I say this is fast, easy and delicious, I mean it! This is one of my favorite recipes to make on a weeknight. This has so much flavor for such a simple recipe. You can make this more spicy or less spicy depending on what you like, just add more or less cayenne pepper. Also I added the chicken bullion, which isn't healthy but it makes everything taste so much better! You can use a rotisserie chicken or whatever chicken you prefer, I just had chicken breasts so that is what I used for this recipe. To make this even healthier serve over cauliflower rice!   • 3 large chicken breasts
  • 1 cup greek yogurt
  • 1 14.5 ounce of fire roasted tomatoes
  • 3 tsp curry powder
  • 1 tsp cayenne pepper
  • 1 tsp chicken bullion
  • 1 diced onion
  • 1 tbsp minced garlic
  • 2 tbsp olive oil
  • salt and pepper to taste


  1. Dice chicken breasts with meat scissors and cook on medium heat in a stovetop skillet with 1 tbsp olive oil and season all over with salt and pepper, cook for about 5 minutes until cooked through, set aside.
  2. On medium heat, add diced onion and 1 tbsp olive oil into skillet and cook for about 3 minutes, then add in 1 tbsp minced garlic, cook for another 3 minutes
  3. add 1 can of fire roasted tomatoes 
  4. add chicken back into skillet
  5. season chicken and onion with curry powder, cayenne pepper, chicken bullion and some more salt and pepper (1 tsp each) 
  6. take skillet off of heat and add in greek yogurt and stir
  7. serve over your choice of rice
