Healthy Brussels Sprout Pizza on Cauliflower Crust

People either love Brussels Sprouts or hate them, and I am one of those who love them, but they have to be cooked right. I recently went to a local pizza place and tried a pizza that had Brussels sprouts on them, so I decided to try and create my own pizza with Brussels sprouts. I actually grew these Brussels sprouts in my garden and harvested them for this recipe. This is honestly one of my favorite things I've made! I used a pre-made cauliflower crust for the recipe that I got at Walmart. It just speeds this up even more. This recipe is easy and SOOOOO delicious! I hope you all enjoy!


Ingredients:

  • 1 1/2 cups Brussels sprouts chopped in half 
  • 3 tbsp olive oil
  • 1/2 red onion sliced
  • 1/2 cup cooked crumbled bacon 
  • 3/4 cup pizza sauce of your choice
  • 3/4 cup mozzarella cheese
  • 1/4 cup Parmesan cheese (plus more for on top)
  • 1 cup balsamic vinegar
  • salt and pepper to taste



Directions:

  1. Preheat oven to 425
  2. chop Brussels sprouts in half and drizzle 2 tbsp olive oil on top, season with salt and pepper (1 tsp each) and mix. Bake in oven for 15 minutes
  3. in a skillet on medium heat, add sliced red onion and 1 tbsp olive oil, cook for about five minutes
  4. on the cauliflower crust spread pizza sauce then add mozzarella cheese and Parmesan cheese
  5. layer the pizza with the sauteed red onion, Brussels sprouts and bacon top with more Parmesan cheese if desired
  6. bake for instructed time for crust 
  7. in a skillet on medium heat add 1 cup balsamic vinegar and cook for about 10 minutes continuously stirring, it will bubble and thicken to a glaze
  8. once pizza is done, drizzle balsamic glaze over the pizza and serve!

  5. Every Friday is pizza night at our house so it’s nice to have a healthy alternative to try so I can still stay on my diet. It looks delicious!
